Five Point Rubric for the Perfect Cheese Pizza
This rubric is developed to assess the perfect cheese pizza. Each student will be graded fairly and have the chance to receive a total of 20 points for a perfect composition of a perfect cheese pizza.

Crust
Poor
The crust is not cooked thoroughly and lacks flavor. The crust is not the right texture and does not have the rise as it should. The crust is either too thick or too thin.
Fair
The crust lacked flavor and was not crispy or flakey.
The crust seemed tough and hard to chew. The crust is similar to a pie crust and breaks easily.
Good
The crust was cooked evenly, however it was not the right texture. The crust seemed too kneaded and tough to chew.
Excellent
The crust was good, not too doughy and not too tough. It was a good consistency throughout.
Outstanding
The crust was perfectly crisp but not too thin or thick. It had great flavor and was cooked evenly. The crust also was brushed with garlic butter or another ingredient
Sauce
Poor
The sauce is too tangy or bitter and lacks robust flavor. The sauce is too sweet and needs some saltiness. The sauce is not smooth and resembles spaghetti.
Fair
The sauce is too chunky. The sauce had a little flavor but not enough to excite the pallat. The flavors did not mix well.
Good
The sauce had a good flavor however the onion and garlic were too apparent in some areas.
Excellent
The sauce was had very good flavor. Seemed to have more of a(ingredient, i.e. garlic) flavor throughout but not overwhelming.
Outstanding
The sauce is smooth and robust. All flavors are combined well and do not over power one another. The sauce is not too tangy or salty.
Cheese
Poor
Not enough cheese used. Cheese was used sparingly and does not cover entire pizza. Cheese appears to have been burned into crust.
Fair
There were too many cheeses that did not coincide with one another. The right amount of cheese was used but it was not spread evenly. The cheese did not melt or was chunky in a few spots.
Good
Pizza was thoroughly covered in cheese. The pizza only appeared to have 1-2 cheeses used. The cheese was cooked to a good consistency.
Excellent
One-two fresh cheeses were used and the flavor of them combined was good. The cheese coated the entire pizza.
Outstanding
Fresh Mozzarella and Paremesan cheeses were used. The cheese was melted and gooey and in some spots was a little crusty and perfect.
Overall Presentation
Poor
The pizza was burned or over cooked. The ingredients were not freshly prepared. The pizza's over all flavor was bland and lacked flavor.
Fair
The overall flavor was not bad, it just lacked flavor. The pizza was not completely cooked through or cooked unevenly.
Good
Although this was not the perfect pizza the sauce had flavor and the cheese was good. The crust was also abit tough but over all had a good flavor.
Excellent
The pizza was cooked well and had a robust flavor. The crust was not thin or thick- it had the perfect consistency. The sauce and cheese meshed well together.
Outstanding
The over all presentation and flavor of the pizza was perfect. The cheese was melted evenly and the sauce was smooth and rich. Over all great job.
