The correct knife was chosen. The cutting board was properly set up with anti-slip precautions. The station had the appropriate containers for trash. whole product, and finished product. The table was properly cleaned and sanitized before beginning.

The knife was held with three fingers wrapped around the handle with the thumb and the index finger on either side of the blade. The knife was moved in a tip to heel motion with the tip of the knife remaining on the cutting board at all times when possible. The guiding hand remained in a claw formation with the finger tips bent under the entire time.
