Uniformity of Cuts	2 Rough chop, the cuts are not uniform in size or shape.	4 Appropriate cut is discernible, but pieces vary widely in size and shape.	6 Pieces of the correct shape are present, but mixed with a variety of other shapes.	8 Most pieces are of the correct shape; the product would be usable as garnish if a few imprecise cuts were removed.	10 Identical in size and shape, could be used for garnish in a fine dining restaurant.
Appropriate Size	2 Vary widely in size and could not be cooked uniformly.	4 Sizes are much larger or smaller than designated size.	6 It is possible to find knife cuts of the correct size, but there is much variation.	8 Most pieces are approximately correct size for specific cut.	10 All pieces are correct size for specific cut.
