Batching and Storing

Student will remove dough from bowl and onto a wooden table. Dough will be cut and portioned into 15/ 13oz portions by using dough cutter/bench scraper. Individual doughs will be rounded into ball shaped portion, then wrapped and stored in dough bins .

Student is sloppy in transferring dough ball to wooden table. Student unable to use or needs help to divide the dough into 15 equal portions using dough cutter/ bench scrapper. Students need help in wrapping and storing.
