Salad PBL Project
You have an opportunity for a promotion to lead chef of the salad station for the Bagpiper Restaurant. You are in competition with 20 others that are being considered along with you for this position. The promotion will be based on your creative use of ingredients and design of new salads that will be served in the Fighting Scots Café. In order to be considered for the position you will need to create four new salads in the categories of appetizer, entrée, separate course, and dessert. You are to be creative in the use of different types of ingredients and flavors. The final decision will be made by the Executive Chef based on the following criteria. • Each salad will be accompanied by a recipe with a yield of 25 servings. • Original recipes showing all of your math and conversions. • A drawing or a picture of the plate presentation. • A written explanation of the ingredients flavors, and textures you propose to use. • Prepare and present one of your salads for tasting.
